Salt keeps it simple with blackboard menus of wine, cheese, charcuterie and condiment choices to mix and match. That is all that’s served at this pared-down two-level establishment, complete with original brick walls and cement floors, located along rough-and-tumble Blood Alley in Vancouver’s historic Gastown neighborhood. Choose three meats or three cheeses and three condiments, plus three wines from the extensive wine list or leave the pairings to Salt’s capable wine-aware staff. There are also daily Butcher Plates, Cheese Plates and Best of BC Plates available, and a cold three-course dinner (there’s no kitchen) that includes a salad, daily plate and dessert, perhaps an Okanagan fruit tart or goat's milk cheesecake. But it's the wine list, one of the city’s most intriguing, with options from around the globe that thrills. There are plenty of hard-to-find BC labels, with most available by the glass and two-ounce tasters. Salt is keen on sherry and mead, too, and will happily match your plates with the sophisticated wines. There's a surprisingly good list of whiskies.
