Openings

Executive chef Grace Nguyen's (Slanted Door, Out the Door) fast-casual Asian Box concept is expanding. Look for new locations in Mountain View (December 7, 2012) and Burlingame (March 2, 2013), as well as a retail line of sauces and condiments. Notable local pizzaiolo Tony Gemignani (Tony's Pizza Napoletana, Tony's Coal-Fired Pizza & Slice House) has added a third North Beach restaurant to his growing empire, this time devoted to Chicago-style pies and Italian-American classics. Capo's draws inspiration from Prohibition-era Chicago in both décor and cuisine, down to retro recipes that evoke old-style Italian cooking (chicken Vesuvio, baked pastas), hearty Chicago-style sausages and sandwiches and even deli meats sliced on a (pristine) antique slicer. Pizzas come in four varieties: stuffed, deep-dish, cast-iron pan and "cracker thin," all made with Chicago's Ceresota flour. Cocktails focus on whiskey. The sit-down restaurant is cash only for now. Renovations at L'Auberge Carmel & Aubergine Restaurant
Carmel's historic hotel L'Auberge Carmel and restaurant Aubergine will undergo a significant remodel at the end of 2012. The hotel's 20 guest rooms, lobby and courtyard will all receive upgrades such as new furnishings, carpeting, fabrics and paint, as well as new bedding and enhanced showers and bathrooms. Aubergine restaurant will be closed from November 26 to December 8 during renovations that will include the addition of a new, custom-built cheese cave and live fish tank, as well as new carpet, fabrics, furnishings and artwork in the dining room. Additionally, a new chef's herb garden and cast iron patio furnishings will be added to the outdoor courtyard. The hotel will remain open throughout the renovations. Chef Shuffle

The French Laundry will have a new chef de cuisine in David Breeden Thomas Keller has announced that in spring of 2013, The French Laundry will have a new chef de cuisine in David Breeden, currently executive sous chef of Keller's Per Se in New York City. The French Laundry's current chef de cuisine Timothy Hollingsworth will work alongside Breeden to ensure a smooth transition, and will pursue his own projects after departure. Hollingsworth has been with the restaurant since 2001, and has been chef de cuisine since 2009. Breeden first started with Keller at The French Laundry as a chef de partie in 2005, before moving to Per Se in 2007, where he rose to sous chef after two years. Before 2005, Breeden, a native of Tennessee, worked at Charleston Grill, the Woodlands Resort & Inn and McCrady's. The French Laundry, 6640 Washington St., Yountville, CA 94599, 707-944-2380.
 

Closings

Expansive Vietnamese enclave Ana Mandara has closed. The multi-level Ghirardelli Square restaurant's high-end Vietnamese cuisine, dramatic, glamorous interior and Bay views made it a sought-after choice for special meals, private parties and VIP events. (And owners Don Johnson and Cheech Marin added to its cachet.) No word yet on future projects for the space or for chef Khai Duong and team. Confirming longstanding rumors, Seasons restaurant inside the Four Seasons Hotel San Francisco closed on Monday, November 12, 2012. The luxe, expansive space with excellent views will be renovated, and the hotel looks to reopen the restaurant with a new concept in February 2013. In the meantime, chef Mark Richardson's worthwhile seasonal California cuisine can still be enjoyed (with a view) in a more casual format at the adjacent and still-open Seasons Bar and Lounge.
