| In the almost forgotten about, one-horse town of Geyserville, invisible from the freeway, Santi exists. It inhabits a 1902 building where one can dine in the original brick bar area or in more romantic quarters past wrought iron grates. It’s quiet but not stuffy---ideal for real conversation and company. The cuisine is well-executed, authentic Italian. The chefs relish the art of charcuterie, so it’s tough to pass up house-cured salumi and sausages. Then give way to antipasti like first-rate pan-fried veal sweetbreads with roasted delicata squash and pomegranate vinaigrette, or house-smoked trout balanced in taste and texture by shaved radish, rocket and crisped polenta. House-made pastas tempt, though return customers crave the tall haystack of spaghettini al dente with soft shreds of beef and pork ribs. Wild boar stew over soft polenta needs no knife. Generous platings make saving room for dessert challenging, but it’s worth it for decadent house caramel gelato or warm gianduia bread pudding with discs of candied persimmon. Though well-meaning, service expertise doesn’t match up to the food. Savor the charming back patio in summertime. |
