The Old World aura and imposing oil portraits of historical figures are gone from the main restaurant of The Fairmont Hotel, leaving us another trendy spot with a casual, American bistro look. The modernized Sazerac is a blend of café chairs, pale-wood and papered walls, and brightly colored accents, although the baroque chandeliers remain. The menu seems to be seeking a style. The cream in a classic version of lobster bisque seems a little dated in these surroundings, and beefsteak fans who order the grilled rib-eye have to confront one that's been marinated, although delicately. Table service is more light-hearted and less formal than it was in the old days, making for a more relaxed atmosphere all around.
