Semolina operates on the theory that pasta, in one shape or another, is an appropriate medium for just about any of the world's cuisines. Whether you'll agree depends on your affinity for such creations as little pasta shells sporting a handful of shrimp tossed in a marinara sauce with sun-dried tomato, black olives, capers, pepperoncini, chick peas and feta. Or an Indian-inspired concoction featuring linguine and bits of chicken breast in a peppery curry sauce dotted with garlic, red onion, peas and raisins. The list of improvisations goes on and on, including Mexican, French, Thai, Cuban and (unsurprisingly) Italian. Bargain prices are a big draw in the casual, briskly efficient dining rooms.
