Inhabiting a modern and trendy setting is Sensing from chef Guy Martin, owner of Le Grand Véfour in Paris. The three rooms are decked out with marble floors, a showcase of Baccarat carafes and projections of artists’ videos on the wall. Chef Rémi Von Peteghem, who honed his skills with Christian Lesquer at Ledoyen, turns out contemporary dishes with fine combinations of tastes. Jerusalem artichoke velouté sauce is enhanced with peanut butter oil, while tuna is stuffed with diced foie gras. Desserts might include vanilla bavarois topped with white chocolate. A great array of wines is offered.
