: Straight lines and bold earthy tones combine to achieve a look of minimalist elegance in this modern bistro space. Spanish chef Sergi Arola offers two tasting menus that range from five to eight courses and are clearly inspired by his Catalan heritage, as well as à la carte options. Start with veal sweetbreads roasted in spices with aubergine and beluga lentils, or marinated sardines stuffed with herring roe and served with bread and tomato. For a main course, we suggest Arola’s signature surf ‘n’ turf items, which include dishes like pigeon filled with prawns and topped with a light stew of Jerte cherries. Or try the hearty stewed lamb with orange, carrot and pumpkin. The wine list features 500-plus selections, showcasing some of the finest wines from Spain and a considered collection from France, the rest of Europe and beyond. The focus is on organic and biodynamic wines that are made in superior soils by small, more specialist producers. A sommelier is on hand to create a customized wine pairing menu. Finish with Spanish cheeses or the sweet flavors of cocoa ice cream in a buttery apricot strudel, and cherry soup yoghurt with tonka bean ice cream and false french toast.
