Shaun Hergatt is an enterprising and audacious character. His roots stem from Down Under (Australia) --- and they're strong from his various tenures in prestigious kitchens in the U.S. as well. With self assurance he has set up his operation close to the top of the financial world. Who would not applaud this energy, and encourage it? Located on the second level of The Setai condos, a stone's throw from the Stock Exchange, the restaurant is lavish with its multiple glamorous rooms, a separate dining room dubbed the wine gallery (for good reason as thousands of bottles are showcased there) and a huge lounge/bar that serves an à la carte menu. Shaun Hergatt proposes an elaborate menu that won't leave you indifferent. With black truffle powder and cream in celeriac espuma or lobster with coconut cream rice balls, he navigates on the brink of ultra-modern trends while avoiding though their excesses. If some ingredients or combinations like a "fluid carrot" or kalamansi (an exotic citrus fruit) liquid gelée sound a tad audacious, Shaun Hergatt satisfies more classic palates with his signature dish, the three day beef cheek in a wine sauce with baby leeks, black trumpet mushrooms and unusual potato leaves. It's a well-run savory affair. This cuisine is artistically presented and rooted in quality local products (Chatham Cod, Vermont Creamery Goat Cheese, Hudson Valley foie gras). Jennifer Yee is a daring pastry chef who has devised her own version of a lemon meringue composed of frozen lemon parfait in fennel lemonade. The still-growing wine list impresses with its magnitude and choices. A popular choice for business lunches is the two-course menu for $27. With all these makings, it's no surprise that Shaun Hergatt is shooting for the stars.
