 Modern, light and elegantly spiced cuisine comes from this storied hotel kitchen (former chefs include David Kinch, Charlie Palmer and Joel Huff), blending local organic ingredients with flavors of the East. Start with the Thai fish cakes or cucumber salad with avocado, purslane and mint aïoli. Continue with the Sonoma confit and breast of duck, or perhaps steelhead trout with Fuji apple purée and yam gnocchi. Desserts might include pineapple soufflé accompanied by coconut sorbet.
