 Sinatra Restaurant Review: Located in the Encore Tower Suites, Sinatra offers up a contemporary take on classic Italian cooking and is the only restaurant sanctioned by the Sinatra family to bear his name. Be sure to check out the awards chosen by Steve Wynn and the Sinatra family that showcase the entertainer's vast career and achievements, including his Grammy awards and an Academy Award for Best Actor in a Supporting Role for "From Here to Eternity," located near the restaurant's entrance. An open, airy environment prevails, and a cozy outdoor patio allows guests to dine al fresco. Chef Theo Schoenegger, a native of Italy, pays tribute to Las Vegas legend, serving dishes in a space full of old-fashioned charm. A fine starter is the carpaccio di tonno --- bigeye tuna carpaccio, pine nuts, raisins, brunoise of roasted pepper and scallions. Pasta dishes include Frank's spaghetti and clams made with Manila clams, tomato garlic broth and imported pasta; the risotto is enlivened with Maine lobster, Parmesan, forest mushrooms and chives. Lovers of pesce will appreciate the grilled Mediterranean sea bass, served with sautéed vegetables, cannellini bean purée and tarragon oil. Carnivores will be pleased with osso buco “My Way” and a 16-ounce dry-aged New York strip. As with all of Steve Wynn's restaurants, a vegetarian and vegan menu is offered, which includes a vegan chocolate cake. Complementing your meal is a vast wine selection from the Wynn's voluminous wine cellar.
