Reflecting the bespoke luxury of the Trump brand, the restaurant delivers grandeur from the moment diners enter the walkway lined with floor-to-ceiling glass wine cellars. Inside, find opulent details, including a massive Swarovski chandelier and an oversize patio for perfect camera shots of The Wrigley Building and Tribune Tower, plus the servers in full suits milling about with bottles of the finest vintage varietals. While his predecessor infused more visual storytelling with his food, executive chef Nick Dostal emphasizes the flavors and ingredients --- sourced from sustainable growers, ranchers and fishermen --- throughout his nine-course menu, with a few whimsical items thrown in for fun. Along that vein, the meal opens with the simplest of vegetables, the modest spring pea (hailing from Oregon), served in a tray, then deconstructed with edible tendrils and later as shaved ice. Among the notable dishes are a meaty, gingery Dungeness crab from Washington State complemented by white asparagus; velvety Castelmagno gnudi with white rabbit; buttery Oregon lamb with Belgian endive and turmeric; and tender Provitello veal. With the exception of one red, wine pairings consist of whites, comprising a just sweet enough Weingut Peter Lauer, “Neuenberg” Fass 17, German Riesling 2015, and a bright, light Domaine Weinbach, “Cuvée Ste. Catherine” 2014. They come in Cru, Premier and Clos options for splurge-worthy occasions. Desserts are both delicate and decadent; however, the Vietnamese chocolate with soured coconut and Saigonese cinnamon is the standout.
