 The Sky Room is perched atop the historic La Valencia Hotel, with an incredible 180-degree view of the Pacific Ocean. With only 11 tables, it is also regarded as one of the most romantic reservations in town. Changes, including a five-seat bar, helped The Sky lose its stodgy image and become stylish. Chef Vaughan Mabee, all the way from New Zealand, works magic with hearty ingredients like foie gras (crusted with macadamias and served with toasted bread and strawberry-Champagne preserves), lamb (with wild mushrooms and Yorkshire pudding) and venison (with truffled kumara---New Zealand sweet potatoes---and wild cherry gastrique), but also has the light touch of artistry with seafood. Try his hamachi with yuzu, grape scales, pickled shiitakes and blood orange slices. Desserts are ever-changing---lucky patrons will dine on a night offering coffee and donuts, featuring chocolate, double espresso mousse and orange beignets.
