Rafael Palomino, one of the leading lights in Manhattan’s surging Latin restaurant scene, celebrates ceviche at his atmospheric restaurant. The owner/chef earlier created the West Side’s Bistro Latino, then wrote a cookbook with the same title. At Sonora, amid large cacti, modern ethnic art and warm colors of the southwest, Mr. Palomino prepares exciting marinades from a number of countries south of the border, in which to cook the raw seafood. He follows through with savory dishes such as red snapper and yucca chowder, Colombian sirloin empanadas, and grilled Argentine steak with yucca and corn hash browns and mojito sauce. Sonora’s engaging wait staff sells well and you should not resist one or two of the best---and biggest---Latin mixed drinks in town. There’s an extensive cervesa collection, too.
