: Wolfgang Puck’s café is a perfect fit for Springs Preserve, a historical attraction commemorating Las Vegas’ dynamic history and providing a vision for a sustainable future. The menu features food from regional producers and growers using sustainable agriculture and seafood. Favorite starters include roasted rainbow heirloom tomato soup accompanied by grilled bruschetta with Laura Chenel goat cheese and extra virgin olive oil; and sweet white corn chowder with eggplant caviar, fire-roasted bell peppers and sweet basil. Sandwiches include a salmon BLT---grilled “wild-caught” king salmon covered with homemade barbecue sauce, smoked bacon, crispy romaine hearts, vine-ripened tomatoes, avocado and herb mayonnaise; and an eight-ounce Prime cheeseburger. The four-cheese pizza is topped with Roma tomatoes and sweet basil. Beer, wine and soft drinks complement executive chef Peter Sherlock’s appealing cuisine, as do the homemade cookies and brownies.
