Chef-owners Brian McCracken and Dana Tough deliver bold flavors and surprising textures at this urban gastropub, but skip the cowboy boots and hat. Moody lighting, gauzy curtains, sleek mirrors and dramatic rotating photographs projected onto an enormous screen create a romantic, industrial setting. Classic cocktails take a twist, and are often seasonally inspired, such as a summer elderflower iced tea spiked with gin or the ultra smooth Kentucky Tuxedo that's a blend of bourbon, sherry, lavender and orange bitters. The ever-changing menu may include a warm asparagus salad; Parisian inspired gnocchi with English peas; veal sweetbreads with Bing cherries, corn and lemon verbena; and slow-cooked pork cheeks. Indecisive eaters would do well to consider the chef's three-course tasting menu. End the meal with such desserts as a lavender sponge cake topped with yogurt and honey. Avoid the trendy “scene" by making an early weeknight reservation.
