The Squeaky Bean Restaurant Review: After several years making a name for itself in Highland, The Squeaky Bean closed its doors and reopened in LoDo, and its new home, with far more dedicated dining room and bar space, feels a lot like a convivial dinner party among friends. A finely tuned staff that doesn't miss a beat is complemented by an equally skilled kitchen commanded by executive chef Theo Adley, whose playful dishes result in delightful culinary odysseys that pay homage to the seasons as well as the Bean's one-acre farm, from which many of the ingredients are plucked. Adley's kale and Brussels sprouts salad is bolstered by peanuts and a Thai vinaigrette; the creamy burrata is paired with an everything bagel, capers and pickled shallots; and the Korean-style fried chicken shares space with kimchi coleslaw. Seafood and fish are equally accomplished, as are the extravagant desserts and deeply satisfying cheese plate, lavished with artisan cheeses from Colorado, and across the globe. The wine list is full of lovely offerings, and the mind-altering cocktail roster is rhapsodic.
