Yannick Alléno supervises the kitchens of the Hotel Sofitel Paris Le Faubourg. Its gastronomic restaurant, STAY Faubourg, is based on a concept already developed by Alléno in Taipei, Dubai and Beijing. Designed by Didier Gomez, the setting is cozy and sleek, with a checkered tile floor and shades of yellow. Meanwhile, the menu proposes many foreign flavors and gastronomy is treated in a less formal way. Patrons can choose a fish or a meat a la plancha, as well as the seasoning and the sauce. Among the specialties, don’t miss the langoustines a la polonaise, with a creamy sauce; a dried skipjack royale with a texture reminiscent of custard, with crisp mushrooms and seaweed; and beef fillet with homemade pepper sauce and french fries. Patrons can customize their dessert by speaking directly with the pastry chef; the millefeuille can be tailored by selecting the puff pastry, either standard or perfumed with cocoa, and the cream, vanilla from Tahiti, hazelnut from Piedmont or pistachio from Sicily. A couple dozen wines are suggested by the glass, among them a red Marsannay Les Longeroies Domaine Decelle-Villa 2012 at €17.
