 Stratta in the Wynn Las Vegas offers regional Italian cooking, and although Alessandro Stratta has now departed the kitchen, the restaurant will maintain its course. The dining room is decorated in warm tones, and diners can catch a glimpse of chefs putting the finishing touches on dishes at the pickup station. Signature dishes from the simple menu include clams oreganata with seasoned bread crumbs; veal Parmigiano with chunky tomato sauce, buffalo mozzarella and broiled Parmigiano; homemade pastas; and wood-fired pizzettes. For starters, we like the assorted bruschetta and the "Stratta" salad with fire-roasted mushrooms, avocado and sweet corn. From the handful of pizzas, opt for the Bosco topped with roasted mushroom purée, ricotta cheese and white truffle oil. Also be on the lookout for specials such as braised short rib or baked whole lobster served in its shell. The wine list is admirable, as are desserts such as Stratta's signature bombolini with ricotta and Nutella. Other delights include tiramisu, caramel apple tart with vanilla gelato, and an upscale version of spumoni---tricolored gelato flavored with chocolate, pistachio and cherry.
