There’s a great deal of restraint behind Gene Kato’s (Japonais) open kitchen concept, which focuses on a sumi-burning robata grill. From it comes peppery pork jowl, tender beef tongue and sweet Australian lobster tail. Get adventurous with charcoal-kissed offal, or play it safe with simple tofu, chilled and served with caviar and ginger crisps. During and post-meal, score cocktails from mixologist Matthew Lipsky. If you’re lucky, a strawberry gazpacho sipper will be part of the equation.
