If you prefer air-conditioning to a day in Florida’s sunshine, head indoors to this “ship” docked in a wide lagoon, which, in turn, is nestled in the atrium of the over-the-top subtropical paradise that is at the center of the Gaylord Palms Resort & Convention Center. Okay, so the ship is really constructed largely of concrete and would sink like a stone, but that doesn't for a moment destroy the illusion of dining aboard a sea-going vessel with a margarita in hand. Fish glint and dart through the water below, the unmistakable warble of Buffett's ode to cheeseburgers drifts along the deck, and at dusk a sunset celebration with street performers lends the whole experience a celebratory Key West vibe. The mixologists reach their full potential with a huge selection of martinis and island-inspired drinks. The kitchen shows a knack with simple seafood preparations, from prosciutto-wrapped corvine to grilled Florida day boat fish with fresh corn, arugula, and shiitake mushrooms. Many menu items feature locally caught fish and locally grown ingredients from citrus and lettuce to organic Tupelo honey.
