This bustling restaurant has locals waiting patiently for coveted seats at a mile-long sushi bar tended by a half-dozen harried chefs. That is part of the problem at Hirosuke---it is so busy that even at the sushi bar customers have little personal interaction with the chefs. It’s all about mass production here, with most ingredients prepped in advance. Hunks of fish are thrown around in a manner that would shock a traditional Japanese chef, and an arsenal of squeeze bottles ensure that signature rolls---such as the “Oh My God” roll (salmon, minced crab meat, spicy tuna and shrimp tempura in soy paper with spicy sauce)---are heavily doused. Sparingly decorated and built for volume, Hirosuke has very reasonable prices, making this a favored destination for a quick and inexpensive, if less than gourmet, sushi fix.
