 Sushi Zen Restaurant Review: Easy to overlook in this city of stellar sushi joints, Sushi Zen is a true standout, thanks to Toshio Suzuki. For over two decades he’s been slicing up and serving raw fish to a loyal clientele. Grab a seat at the bar and let Suzuki feed and educate you via the omakase menu; he’s spent years studying the philosophy and history of Japanese food. Fish is so fresh that it still twitches as it hits the palate. Various types of soy sauce and mirin are thoughtfully combined to find the ideal balance and bring out the flavor of the fish. A custard-like homemade tofu is among the city’s best, while a slightly more complex dish is the foie gras over daikon, a nice pairing and light as steam. Steamed vegetables---individually cooked---are lessons in restraint and simplicity. The drink menu is stocked with various types of saké---from clear to cloudy, robust to light. |
