: If you want tataki --- a Japanese style of searing and marinating fish or meat --- then you're in the right place. If you want kangaroo tataki, then TAG, chef-owner Troy Guard's stylishly appointed, Asian fusion restaurant in Larimer Square, is your muse. The tataki, paired with shrimp, pickled red onions and a tarragon-orange aïoli, is just one of the many dishes that's singled out Guard as one of the top chefs in the city, a culinary innovator, whose Asian-inspired board trumpets bold flavors and ingredients like sushi-quality fish, which pops up in a taco with charred ahi; and miso black cod partnered with edamame salsa. It's all unleashed from a bustling open kitchen that boasts a chef's counter offering the opportunity to banter with the crew, who turn out foodstuffs that are paired with beautifully crafted cocktails and wines from an impressive portfolio that spans the continents.
