Taste of Malabar is the classic, clean and well-lighted place---so scrubbed and fluorescent that we almost suggest shades and sunscreen. But if the setting lacks Southern India’s palm-shaded allure, the cuisine transcends its spareness. Prime the palate with the lentil “donuts” that are urad dal, or perhaps onion bhaji croquettes dipped in coconut chutney. From the “bread” section we recommend either the mysoore or its kin, the massive masala dosa, a rice flour crêpe stuffed with vegetables scented with curry leaf. Distinctive main dishes include the fish molee in coconut milk with garlic and ginger, the Kerala-style shrimp in a potato and almond sauce, and the Goan fish do piaz with onion, tomatoes and masala. Other offerings take the palate on tour with traditional goat curries, Malabar-style lamb, and Kerala-style beef with shards of coconut. Any assertive spicing can be salved by a serving of dense and fruit-forward mango ice cream.
