Flavors of the American Southwest come to life here from a grill dedicated to the basics---corn, chilies, beans and grilled and roasted meats. The aroma of freshly baked tortillas fills the air. A mesquite-burning grill imparts a sweet, smoky essence to the specialties, while a wood-fired rotisserie slowly roasts meats and fowl in traditional Southwest style. The menu borrows from the Pueblo, Aztec, Maya and Mexican cultures, all shaped to the contemporary palate.
