Terra, the popular Hillcrest eatery, has risen in our estimation for an overall newfound attention to quality and detail epitomized by its lobster tamal. This small plate hits all the right notes: presentation, complex flavors and contrasting textures. Chunks of tender Maine lobster marry well with the sauce; the tiny black quinoa is caviar-esque, almost popping in your mouth. We also suggest the butternut squash bisque, combining the sweetness of bright orange squash and the spiciness of cinnamon oil to festive effect. The potato-Brie quesadilla, while competent, is a step down in our estimation. Thankfully, pan-roasted sea bass tipi tapa gets back on track, combining vivid flavors, textures and colors with its flaky, nicely cooked fish filet, curried carrot-potato mash and a topping of macadamia and mango purées. Short ribs, braised with cinnamon and cocoa and served with an heirloom bean ragoût and wilted greens, sounded right up our alley; but, alas, the meat was not fork-tender and the beans were downright tough. Desserts such as persimmon-chocolate chip bread pudding and classic crème brûlée bring an exhilarating conclusion to a roller coaster experience of culinary highs and lows.
