: To get into the proper mind set --- and mouth set --- first order a "luge," which encapsulates the name of the place: smoky scotch interplays with the oyster brine and sets the tone for a meal of pleasing complements and contrasts of flavors and textures. They even provide four-step instructions for how to properly partake. Then plunge right into a tray of fresh oysters or an assortment of seafood options --- scallops on a bed of meaty oyster mushrooms with a smattering of pancetta relish, or sea urchin roe laid atop a schmear of avocado mousse on a toasted baguette. The focus here is seafood, and whatever’s in season is what’s on the menu, vegetable sides included. These have a protein component, so if you don’t opt for entrées, your meal will still have some heft. Heirloom tomatoes are flanked by cranberry beans, and the green beans feature a dollop of burrata. Chocolate crémeux to finish is rich, but not too sweet. The ample wine list gives preference to French labels, with representation from Italy, Germany and the U.S. With its thoughtfully composed menu, this bare-wood-and-Edison-bulb establishment reveals that it’s not just another flavor of the month.
