Chef Hidekazu Tojo gained international fame with his dazzling sushi creations and has once again delivered a special sushi roll to celebrate the Vancouver 2010 Winter Olympics, the Celebration 2010 Roll. Inspired by the colours of the Olympic Rings that grace the city of Vancouver, the roll is loaded with Dungeness crab, red snapper and sockeye salmon with asparagus, pineapple, egg crêpe, big eye tuna and spinach. The impressive room has been redesigned to reflect the Olympic party. Custom-made Shinto shrine rope-braids, special Olympic-coloured bamboo, and rice grass “torches” have been installed in honour of the celebration. Most want to sit at the 15-seat sushi bar, sip saké, and order omakase: “chef’s choice.” Also in honour of the Olympics, Tojo offers three special omakase tasting menus that showcase local seasonal ingredients and Japan’s famed Kobe Wagyu beef. During the festivities, Tojo’s will be open 7 days for dinner, 4 p.m. to 11 p.m.
