One of the best ways to experience Tojo's is to order omakase, the “chef’s choice” selection. This entitles you to sit at the 15-seat sushi bar and watch chef Hidekazu Tojo and his cooks at work. It's here, too, where locals, politicians, visitors and celebrities alike line up to savor topnotch sushi. Tojo, the inventor of the BC roll (inside-out barbecued salmon skin roll with cucumber and sesame seeds), has more than 2,000 traditional dishes in his repertoire, which is inspired by Japan but rooted in the Pacific Northwest. Each item is re-created using fresh, locally sourced organic produce and fish, plus Japan’s famed Kobe Wagyu beef. Nigiri, sushi and sashimi are positively worth exploring, as are some of his hot dishes such as Canadian sablefish with a “secret” marinade, and nori-wrapped red tuna. Desserts aren't a strong suit, but a glass of sweet and fruity plum wine is an excellent option for rounding off an evening of inspired dining. The welcoming wine list is well chosen, as is the beer collection, but make way for the sakés. Enjoy one with your meal, or try a few in the serene saké lounge. Attentive service is a given.
