| Sourcing local, seasonal ingredients isn't anything new for Trax chef-owner Steven Waxman. The former wine merchant turned chef has been doing exactly that since he opened this cozy neighborhood gem in 1998. Housed in the restored Ambler train station, Trax exudes a friendly vibe as soothing as the clickety-clack of the local R5 taking commuters from Philly to their homes in the northern 'burbs. Working with local farms like Maple Acres, or when weather permits, harvesting from his own garden, Waxman delivers solid American fare with graceful attention to detail. Diners can enjoy house-cured pancetta in the spinach salad, the eye-popping color of fire-roasted peppers and locally made mozzarella, and the hint of spice in the rémoulade accompanying the crab cakes. Waxman has to play to his audience --- which tends to be on the conservative side --- but he gets creative where he can. The crispy rice pudding rolls with caramel sauce are a case in point. BYOB. |
