No, Turkish cuisine is not exactly like all other eastern Mediterranean food---despite the appearance of hummus and baba ghanouj on the menu. And, for that matter, the hummus here is exceptionally flavorful and the baba ghanouj especially smoky from the roasting of the eggplant. Both can be had on a meze platter with other eggplant specialties, the bulgur salad known as kisir, and perhaps a cold bean salad with tomato sauce. Other appetizers worth a taste are the sigara boregi, a deep-fried cigar-shaped pastry stuffed with feta, and the simple but satisfying fried eggplant slices served with a mild, creamy yogurt-and-garlic sauce. The same sauce is employed in a lush variation of the lamb and beef adana kebob served over puffy pita cubes in butter. The traditional doner kebob, cut from a stack of lamb and beef cooked on a vertical rotisserie, may look like a Greek gyro, but it has a dervish-like twist that seems more intense. For the true taste of lamb, however, try the shank wrapped in eggplant and served with a lusty tomato sauce. The creamy rice pudding will disappear down to the last grain.
