UUBU6 Restaurant Review

: On the South Side Slopes, chef Michael Lench discovered a set of buildings that once housed the Working Man’s Beneficial Union #6 Lodge. After much renovation---preserving as many historical elements as possible, then augmenting these with sleek modern fittings---the former union social club debuted as a contemporary American restaurant, UUBU6 (pronounced: ooh boo six). Lench’s environment gives diners exciting seating options: a loading dock, interesting vistas from varying room levels, and an elevated open kitchen as theater. Drawing from seasonal ingredients, the menu showcases fresh fish, prime meats and game in season. Poultry gets a makeover in dishes such as chicken en papillote with garden vegetables and lemon chicken over arugula. Desserts like lemon cheesecake and berry cobbler display the kitchen’s command of comforting confections.
