A tiny but chic restaurant and wine bar, Vers is easily one of Chatham's most modern and innovative dining destinations. The restaurant’s name means "fresh" in Dutch, reflecting chef-owner Jonathan Haffmans’ heritage and his philosophy of using the finest local, organic ingredients available. The seasonal menu features updated twists on classics, like a beef carpaccio with foie gras mousse and pistachio and a garden salad that includes smoked barley, pickled fruit and a carrot sorbet. We like the pastas, such as the smoked ricotta gnocchi and lobster risotto, and for those with bigger appetites, there are hearty dishes of butter-poached rib-eye with fiddlehead ferns and mushroom ragù. Desserts, which are complex and artfully presented, meld flavors: chocolate with black sesame and sea salt caramel, for example. Also on offer are fairly priced four- and eight-course tasting menus with optional wine pairings. At the lobby bar of the Chatham Orpheum Theater, Vers presents light bites for all-day dining, open late on weekends.
