Though there are many all-you-can-eat options in Las Vegas, none are quite the experience that comes at a Brazilian churrascaria. Via Brasil is an elegant, 5,500-square-foot dining room that seats up to 250 guests. The ambience of the restaurant is inspired by Rio de Janeiro's Copacabana Beach, complete with the sounds of flowing water thanks to a wall of cascading water. Like traditional churrascarias, guests are given a disc on their table with one side green, the other red. Start off red, and head to the gourmet salad bar with over 20 options. There are cold dishes, including potato salad and a selection of charcuterie and cheese, and traditional hot dishes, such as creamy, flavorful chicken stroganoff. Vegetarians will be pleased with just the salad bar, but this is true rodizio dining, after all. Flip the card to green, and let the meat flow. Via Brasil offers around 18 meats that are presented at your table by servers. Flavorful and succulent garlic picanha, or top sirloin, is one of the top choices. We also recommend the moist and tender suckling pig, complete with crisp skin. Carnivores will be satisfied with more choices of pork ribs, rib-eye, sausage, leg of lamb and flank steak. The Brazilian meal is never complete without a caipirinha, and Via Brasil does it right with cachaca rum, fresh muddled limes and a bit of sugar.
