: Chef Victor Detec knew his onions when he located his restaurant in an art colony like New Smyrna Beach. Look for the blue neon sign and then take your table in a setting snappy with white napery and royal blue trim. Victor himself is in and out of the dining room, making sure his guests are happy while fine-tuning majestically in the kitchen. His famous cornbread comes with the meal, and an entire feast can be made from his award-winning swamp cabbage soup made with alligator meat. He does several dishes with blue cheese brilliantly, and all his inventions show smarts: baby-back ribs in citrus and wild berries, duck breast with apricots, herb-crusted tuna and vegetarian offerings on the menu or made to order.
