Simultaneously hip and classic New England in feel, Victory begins with a lively bar scene and inventive cocktails handcrafted from local ingredients. Stay there or go into the warm dining room upstairs or down and enjoy modern cuisine made with sustainable, locally farmed and grown ingredients, like grilled asparagus layered with melting truffled Fontina and tangy pickled ramps, or crispy duck confit with wildflower honey to start. The menu changes seasonally, but in spring you might find a flaky yet dense organic salmon with a warm English peas-and-fingerling potato salad and a mint and lemon vinaigrette. At the bar, opt for the thick burger and crispy fries with creamy aïoli for dipping, or go for the simple organic chicken with morel sauce and a lentil ragoût. Desserts are enticing as well with chocolate galore and there’s a good selection of ports to finish the experience.
