About chef Guillaume Guibet: Le Verbois is a true-family story which started with the grand-parents of chef Guillaume Guibet. Both of them were restaurateurs. They passed on their passion to their son Laurent who became a chef. With his wife Laurence, who was at the front of the house, they took over Le Verbois purchased two years before, in 1982, by Laurent’s father when he suddenly passed away. After thirty years, Laurent has moved to the front of the house with his spouse, leaving the kitchen entirely to his son, who was at the time twenty two years old. A gamble you might think? After you’ve dined at this beautiful and elegant former 19th-century hunting lodge, we can attest that it was not. Laurent can only be proud of Guillaume who has created a modern and very thoughtful menu composed with dishes inspired by the former establishments he staged at, especially with chef Kei Kobayashi at his restaurant Kei in Paris.
