Hidden in an alley off Chinatowns most crooked street, youll find a set of stairs leading down to one of New Yorks oldest Vietnamese restaurants. The basement space epitomizes the term bare-bones, but were happy to drink from plastic cups and sit on rickety chairs for the chance to dine on the light, fragrant food that emerges from the kitchen. Shrimp paste that is baked on sugarcane stalks, crunchy spring rolls and an addictive green papaya salad with beef jerky are our favorite appetizers, though in winter well opt for a huge steaming bowl of shrimp-sour soup or beef pho. Anything in fermented black bean sauce is a good bet for an entrée, as is the beef with watercress, and thin pork chops on rice vermicelli.
