Well-executed dishes feature creative twists on French classics. Among entrées, an Icelandic cod prepared sous-vide with a sauté of mushrooms, spinach, fingerlings and Dijon mustard sauce demonstrates classic French preparation, while pan-roasted breast and confit leg of Long Island duck with black rice, baby bok choy and blood orange sauce showcases a fusion of Asian ingredients and French execution.
