THIS RESTAURANT IS CLOSED Vu Restaurant Review: At this sultry resort restaurant, we find that hotel dining can not only be exciting, but just plain fun with Modern American cuisine that's sophisticated and a wee bit quirky. Imagine Kobe short ribs (painted with a blend of molasses, coriander, cumin and curry) served with dabs of puréed cornichons and honey-lightened horseradish. Or Taylor Bay scallops bathed in rosemary-punctuated cream sauce, with plump raisins and hazelnuts. Straightforward ingredients like chicken, pork and steak are transformed into complex dishes that please the adventurous without frightening the timid. New York steak is served with macerated Bing cherries and two kinds of mustard, while veal tenderloin, mounted on tart quince purée, is accompanied by veal bacon and crumbles of sharp Roquefort. Hardly a week goes by without a menu tweaking that reflects seasonal surprises. For the best surprise of all, try the five-course tasting menu, which changes nightly and comes with no hints or descriptions. Sit back and relax in the hip, inviting surroundings.
