Originally from Burgundy, chef Franck Mathevet, after cooking in the French Alps, in London, in Anguilla and in Los Angeles, has settled on the precious island of Saint-Barth. Located in the port of Gustavia, the dining room overlooks the water and the ballet of boats. Mathevet has mixed his passion for French classic cuisine with the local one, and serves light dishes like the chilled tomato and fresh goat cheese mousse, the scallop carpaccio in olive oil and lemon juice dressing or the lobster bisque with giraumon (local squash) for appetizers. Despite the fact that we are on an island there are many choices, prepared with products like pork, duck, chicken, beef, lamb and even pigeon. Of course, lobster, red snapper, monkfish or “catch of the day” are on the menu. Try the house specialty, the “grenouillettes de volailles”; these are not actual frogs’ legs but chicken prepared in the same manner. The sweet corner is composed of selections from a trolley, a warm chocolate fondant, and ice creams and sorbets. Interesting wine list.
