 At this upper-floor restaurant in the formerly industrial Gulch neighborhood, stylish Southern cuisine is executed with the consistency of science and the flair of fine art. The offerings are conservative but well matched with countrified sides, as in grilled mahi mahi with hoppin’ john, country ham and mustard greens, or pan-fried quail dashed with red-eye gravy, flanked by an onion tart. Supporting Watermark's cooking, its extensive wine list is buttressed by professional service and fine crystal for all wine patrons. The list's organization includes a substantial selection of new-world Chardonnays against an equally substantial line-up of white Burgundies, for instance. Glamour Italian reds and Bordeaux have major roles in this extensive collection, and there is a good round-up of both half-bottle choices and large formats. What the space lacks in warmth---airy and stark with low lighting---it more than makes up for with the view of the sweeping downtown skyline. In the warmer months, dine on the rooftop patio, where aromas from the rooftop herb garden perfume the air.
