WATERTABLE Restaurant Review: Huntington Beach’s coastal ambience is captured quite well at this main restaurant in the Hyatt Regency. Floor-to-ceiling windows and a bright, airy dining space create a laid-back vibe that is further extended by the sprawling outdoor patio. Guests can chill in the bar/lounge area, indulge in a craft cocktail or a selection from the sizeable wine list, and enjoy executive chef Manfred Lassahn’s small plates bar menu highlighted by “bar jars”--- sharable Mason jars packed with house-made pâtés, pickled vegetables and spreads. Lassahn’s take on contemporary cuisine effortlessly fuses comfort food with more advanced culinary expressions on the main menu, where simple offerings like the smashed Yukon Gold potatoes share space with succulent mini lamb chops. Entrées feature composed meat and fish dishes such as the tender pork porterhouse and “build your own” fare, in which diners select their own main and accompaniment. Be sure to save room for the house-made donuts and basil ice cream. Swing by in the morning for breakfast or for Sunday brunch with its interactive food stations.
