Wild Boar's menu is built around a substantial wine cellar (15,000 bottles, 2,000 selections) that traverses the wine-growing world; dégustation menus are served with or without wine. In autumn you might find dishes such as wild Tasmanian abalone, Georgia quail and Oregon mushrooms; in the spring, grilled asparagus bundles and prosciutto in black truffle vinaigrette, free-range lamb or Prime beef, and fresh pompano or Maine lobster. Note: prices are high for Nashville, but if you're accustomed to fine dining tabs in New York or Los Angeles, you'll be pleasantly surprised at what a meal of this caliber costs here.
