After branding his OC restaurants initially as Rouge Bistro and then French 75, David Wilhelm has now changed the name and concept of this Irvine Market Place location to Wilhelm’s Chophouse. The French fin de siècle artwork may be gone, but the Art Deco lighting and sumptuous décor remain. Plus, locals will be glad to know this restaurant’s suave “red bar” has not been changed whatsoever, though the live jazz is gone. The menu features decent interpretations of American bistro food with Southern regional accents, such as Texas red chili, buttermilk calamari and shrimp diablo. There are also enticing salad and sandwich selections. For entrées, try the flatiron steak, barbecue-spiced salmon, slow-smoked baby-back ribs, New Orleans-style crab cakes or fresh-caught fish of the day. You can still order Wilhelm’s trademark chocolate soufflé, but now you also have options like a banana cream and white chocolate pie, strawberry sundae and orange zest crème brûlée.
