: WINDOWS IS CURRENTLY CLOSED. Year after year, Windows, perched atop the recently refurbished London Hilton, confirms its status as one of the restaurants in town to value. An evening there is a complete experience. Behind the huge windows, indeed a whole glass wall, London displays her gems, especially at night. What an entrancing cocktail for the senses with all those shimmering lights showcasing the jewels of Buckingham Palace against the dark shade of Green and Hyde Parks. Angelo, surely the most charming matre d' in town, and his well-disciplined young team know how to retain the seductive magic in this elegant room. Trust him to guide you expertly through the many choices offered by Jacques Rolancy. Jacques won the much envied title of Meilleur Ouvrier de France, and he only gets better as time goes on. Watching him for several years now, we've seen him reach a new level of serenity and confidence as a master of his art. His craftsmanship shows from the start in a dish of pan-fried langoustines, cooked to the right degree of firmness and delightfully complemented by herbs, while scallops melt in the mouth. In the appealing Menu Dégustation, the venison and foie gras marbled with wild mushroom salad and accompanied by a beetroot vinaigrette is a delicacy to remember. For the calorie-conscious, he has a few options, like pan-fried fillet of brill with a salad of confit of fennel, and a sauce flavoured with Jerusalem artichokes---a dish which offers flavour and rejects the sin. Because it is so lightly roasted, a wild duck in lavender sauce with salsify, artichokes and Paris mushrooms leaves you feeling only partially guilty. To make the evening perfect, you find---at a price---a marvel of a wine list, but a few reasonable choices are also available. Set 5-course dinner £44.
