Wine Vault & Bistro Restaurant Review:


Chris and Mary Gluck have created a thoughtful dining experience, unlike any other in San Diego. A favorite of local oenophiles, the restaurant is only open consistently Thursday through Saturday, but the weekly calendar fills out with winemaker dinners and special occasion events. California seasonal fare is listed on every-changing menus that are created in symbiosis with small production wines. A recent three-course meal ($30, $45 with pairings) showcased deconstructed cassoulet with a Gérard Bertrand French blend; Spanish seafood stew with Stolpman Roussanne; bay scallop dumplings with ginger and scallions complemented by Etre Chardonnay; and brioche bread pudding with bourbon caramel or Camembert cheese with wine-infused fruit compote. Winemakers like Justin, Ponzi, Hobbs, Foxen and Mondavi (to name but a few) have been featured guests. A fireplace cozies up the all-white space that favors clean design, while an outdoor patio provides a few al fresco seats. Saturday night brings a chef’s five-course tasting menu ($35, $55 with wine) with eye-catching offerings like white asparagus bisque, crispy oysters with beet and avocado salad, braised Kurobuta pork shank with herb polenta, and cinnamon-spiced carrot cake. Service is fluid and unobtrusive.
