The dishes made popular by this superstar chef may be savored for relative chump change at his Express restaurants, a lovely concept for busy folks who want good cheap food on the run. But every dish is prepared to order. Here's the drill: You step up to the register, place your order, just as if it were a fast-food joint, and pay for it. Pick up a beeper and a properly clad waiter will bring you your dish. We're quite fond of the smoked salmon-dill cream pizza, and the pumpkin-stuffed ravioli with balsamic butter sauce is pretty good, too, although we'd like to see more butter and less reduced balsamic vinegar next time. The meal deal has to be the teriyaki salmon, a fine cut of filet grilled and served with Chinois slaw, baby spinach and mixed baby greens. You can get it with the garlic mashed potatoes if you want instead of the slaw. We'd like it a little less salty and a little less cooked, but for most folks, the doneness is just perfect (certainly still moist and flavorful). There's a kids' menu but we saw one young lady happily attacking the half rosemary roast chicken and a heap of those garlic mashed potatoes. Beer and wine only, and the wines are fine. The Sonoma Cutrer-Chardonnay is great with the pumpkin-stuffed ravioli.
