Throughout myriad ownership changes, executive chef Charles Vosbergh has remained in command of the culinary creations. Overlooking the golf course, the dining room and its screened-in porch provide a splendid view of the rolling north Georgia landscape while one enjoys a meal. But there are shortcomings. We don't understand why this posh resort fails to tap into the local and regional cuisine movement. Alaskan salmon is on the menu, but at 7:30 p.m. on a weekend evening, why is there none available? Order a burger medium rare, and you might see a tinge of pink here and there. Tasty, but not special. At breakfast, choose a dish from the menu rather than going with the buffet. The wine list is splendid, with excellent offerings in Champagnes and the very expensive cult wines. But red wines are served entirely too warm, blunting the pleasure factor. Completed in 2010, a special cellar space, also available for private dining, might help solve this issue if wines can be kept at proper temperatures in the grill itself. Note: An automatic 20 percent gratuity is added to the bill.
