Beneath its festooned cathedral ceiling, and within its sinuous bar and dining room, chef Mark Muszynski does what seems to be the undoable. He puts tropical ceviches, carpaccio, quesadillas, and paella all on the same menu, and makes it work. His concept of fusion includes all countries that touch the Mediterranean, but Polynesia finds its way into the blend. Try the ceviche sampler of scallop, shrimp and tuna, have the macadamia-crusted lamb chops, and leave room for a Phillipine churro with dipping sauces.
