This bustling German-inspired beer hall specializes in the fine art of sausage making with more than twenty-five options from which to choose. There are traditional German sausage varieties such as bratwurst and Oktoberfest. But the menu extends to other types, too --- think Italian Calabrese and Moroccan lamb merguez. The real magnet, however, is the gamier sausages like bison meat mixed with blueberries and maple syrup or the duck sausage, which has a finer texture due to the addition of foie gras. Three vegetarian/vegan options are also available, like black bean with lime and cilantro. Also, be sure to sample the duck fat fries with one of many dipping sauces (rosemary-maple), or order them dirty topped with sautéed peppers, onions and jalapeños. WVRST meets its mark as a brews destination by offering a widely varied craft beer and cider list, featuring products from local breweries within Canada as well as the U.S. and Europe.
